No clue what I had since Thursday. I was sickly and basically reached for and ate anything and everything that made me feel better including bits of ice cream. Mmm ice cream for sore throats... On the plus side I checked sometime this weekend and hey I lost 4 lbs!

Hofo Challenge Day 3
Trying to get back on the horse again.

1/4 c eggbeaters with 1tsp shredded low fat cheese and 1/2 a 97% fat free hot dog

Hofo Challenge Day 2
Coffee with sugar free vanilla syrup and almond milk.
1/4 c eggbeaters with 1tsp shredded low fat cheese and 1/2 a 97% fat free hot dog (the hot dog was shaped like a cartoon waddly penguin and at 40 calories per dog it made me happy)
Salad: mixed leaves, 1tsp of chopped pecans, some ham and cheese strips with my spray dressing
1 can V8
I have cheated massively. I confess. Sushi pig out. Passed by my most fav sushi joint in the whole town with my buddy while starving at 8PM and we just couldn't resist. Plus was, most of it was sashimi. Minus, we had some tempura too. SPLURGE!

Cabbage Rolls

1 head cabbage
1/2 onion minced
2 tsp minced garlic
1 cup finely chopped celery
2 cup quinoa cooked
1 cube light firm tofu
1 lb ground turkey
1 28 oz can of diced tomatoes
1/2 cup low fat sour cream
Core cabbage head. Dump into boiling water and remove the leaves as they fall off. Cut out the thick vein from the bottom of each reserved leaf, making a V-shaped cut to enclose filling. Set aside to cool.
Cook onion, garlic, and celery until onion is translucent and fragrant. Mix into turkey. Add spices here if you want. I used a bit of salt, pepper, and cumin. Mix in quinoa and tofu crumbled up.
Take the outer leaves of cabbage and line your pot with them. For the rest of the big leaves, use to wrap filling and place rolls seam side down in pot. Chop up the remaining part of the cabbage and add to pot. Pour tomatoes on top. Cover and simmer for about an hour. When done, take out rolls leaving the sauce behind and stir in the sour cream. Spoon that on top of the rolls to serve.
OPTIONAL: I wanted to add extra nutrition and make this more of a one pot meal so after taking out the rolls I added 1 cup navy beans (cooked) and a bag of frozen okra. I also had extra filling left over that I made into tiny malt ball sized meatballs and added to the sauce to simmer. When all that cooked through (about another 20 mins or so) I added the sour cream.

1/2 cup egg beaters with 1 tblsp low fat shredded cheese. (~80cal total)
Salad:
baby spinach leaves covered in grape tomatoes, shredded zuke, marinated shrooms, avocado, cucumber, 2 tblsp poached diced shrimp/scallop mix, 1/2 hard boiled egg, 1 sliced grilled chicken breast, 1 tsp hummus, 3 squirts dressing (10 cal a squirt)
2 home made cabbage rolls (recipe to follow)

HoFo Reboot!
So begins the great hofo challenge. Hopefully with my friends behind me I will lose some of this fat. Possibly because my new schedule leaves me so tired and with so little energy or time to (my commute has doubled after all) to work out I have totally ballooned up since moving into my new place. I refuse to get a larger pant size so now I'm basically cutting off the circulation to my lower body every day when I sit my fat rear down. Must. Lose. 50 lbs! Though I'd settle for 30. I'm not too ambitious.
